This stew is made from a bunch of beef, some blueberries, carrots, and an onion. It may sound like a bit of an odd mix, but trust us, it works. A stew is the perfect platform to construct a great Paleo meal, and here there’s plenty of healthy foods being combined. She’s provided a way to take this cut of meat and turn it into something special that’s marinated in citrus juices so it’ll come out very tender and juicy. Steak-centric salads are a staple of the American gastropub menu. Unfortunately, the “salad” interpretation is a bit loose—the lettuce merely a bed for a Flinstone-sized protein serving, the butter-yellow croutons, tons of cheese, and creamy dressing blanketing all. We kept the chargrilled steak then topped it off with good-for-you avocado and a vinaigrette that complements the vegetables rather than disguise them. This changes not only make it healthier, but it keeps the whole dish paleo-friendly. A little meat goes a long way: just 12 ounces is plenty to serve 4.
These pork chops are some of the best we’ve seen, and it is through a combination of preparing the pork chop correctly, and topping it with a delicious fruit slaw. When choosing the pork for your pork chops, you want to make sure that you go with an organic brand, rather than conventional. This is true with all of the meat you purchase for Paleo meals because it won’t be loaded with antibiotics, and the animals will have been fed organic feed. For the fruit in this, you’re also going to want to stick with organic peaches, plums, and apricots to avoid chemicals and pesticides.
The main limitation to mention is the layout. In particular, the overall design and font size means that some parts of the recipes are hard to read – especially if you’re trying to follow the recipe while cooking. The problem may not be dramatic for everybody but it would be a particularly significant issue for anybody with even minor vision challenges.
If you love Mediterranean food as much as I do, then you need this book. The recipes are delectable, hardy, yet simple to make. Caitlin’s husband, Nabil co-wrote this book with her. She's a badass former roller girl, I'm a roller girls spectator. She's a hilarious writer, I like to think that I'm a hilarious writer. Really though, I respect this woman so much and her book is genius. She not only dishes up bold flavors and paleo hacks, but the book is laid out in the exact way my brain works. This sweet potato is stuffed with beef and blueberries, a combination that you may not have ever seen before. They all combine to form a very well-balanced Paleo meal, and you’re getting tons of antioxidants both from the blueberries and the sweet potatoes. The beef gives you protein, while sweet potatoes are a carbohydrate that is digested slowly by the body. There is just as much sweet potatoes as there is beef, with just a bit of blueberries added for good measure. This makes for a microcosm of what it’s like to eat a perfectly portioned Paleo meal.
Salmon tastes great and it is one of the top recommended foods you can eat while following the Paleo diet. This is because it is loaded with plenty of omega 3’s, as well as healthy fats that your body needs to function at its best. In this recipe she has made things very simple, which only serves to bring out the natural flavor of the salmon. She has it topped with slices of lemon, and also capers are used for subtle flavoring. All that’s needed is a vegetable dish to go with it to make it just right so you don’t get the munchies late at night before bedtime.

FYI, The Paleo Kitchen cookbook has a mayo recipe that is SOOOO much easier…you take 3/4 cut oil of your choice, 1 egg, lemon juice(1 tsp I think), and 1 Tbsp Dijon mustard, place them in a tall, narrow container, and use an immersion blender! Start at the bottom and move the blender upward as the ingredients emulsify. I had quit making my own mayo because the other way was SO time consuming and mine never seemed to come out right, but this version is pretty fool-proof! I use grapeseed oil because the olive oil is a bit bitter for me.

This is the worst cook book I have ever bought. Every recipe I have tried so far has had errors. It will either give a list of ingredients and then fail to tell you what to do with one of them or like the one i am cooking right now...it tells you to roast the chicken at 475 for 25 minutes and then reduce the temperature and continue to cook 45 minutes....ummmm what temp should a person reduce it to? Good thing I consider myself a good cook and know what a whole chicken bakes nicely at. But for some people this could be really frustrating and it is for me when I am in a hurry to make a meal for my family. Buyer beware. Im sure there are better Paleo cookbooks out there.
